Cutting Up

In this close-up you can see the drawknife technique and the correct angle at which to hold the drawknife.  The use of the dumbhead on the shavehorse to clamp the work-piece is clearly illustrated.  It is worthy of note that the drawknife technique here is a little unorthadox.  The bevel of the drawknife is being held down, allowing for tighter control of the thickness of the shavings.  Most authorities will tell you that the drawknife should be used exclusively bevel-up, but it worked very well in this instance.
